The concern centers on how potatoes are cooked. High-heat cooking methods like frying, roasting at high temperatures, and baking produce more acrylamide than boiling or steaming. When potatoes brown or crisp, the Maillard reaction occurs, generating acrylamide as a byproduct. Darker, crispier potatoes contain higher acrylamide levels than lighter-colored preparations.
The International Agency for Research on Cancer classifies acrylamide as "possibly carcinogenic to humans." While research on humans remains limited compared to animal studies, nutrition experts note that reducing exposure makes sense as a precautionary measure.
Parents can lower family acrylamide intake through simple adjustments. Boiling potatoes instead of frying them eliminates high-heat exposure. If you prefer roasted or fried potatoes, keeping them lighter in color and avoiding heavy browning reduces formation.
